Not only is the spring air likely to bring a sea of daffodils to the Borough, it’s also promising a fresh crop of new restaurants.
First there’s the much anticipated completion of 44 West and its anchor establishments. Then there are the new tenants promised in the shuttered home of Landmark. There are a mix of established chains and plucky independents. A range of cuisine from brew-pub to oyster bar to ice cream shop. Ok, so the food options are not going to push any boundaries but if you like what West Chester already has to offer, you’ll now have several more places to get it.
Here are seven new restaurants expected to hit the Borough this year:
Greystone Oyster Bar
Location: 7 North Church St.
Coming: End of March/Early April
What is it? A new oyster bar is planned for the currently, being renovated 7 North Street. Not much available in the way of details yet, except they are planning for outdoor dining.

Mae’s West Chester
Location: 39 West Gay Street
Coming: Late March
What is it? Mae’s will be a BYOB farm-to-table cafe brought to you by local-cater and chef Josh Taggart. It will be open for breakfast, lunch and dinner with grab-and-go bites for those on the run. You’ll find Mae’s on West Gay Street just across from the courtyard at the new 44 West, a perfect place to enjoy those bites al fresco.
La Tartine
Location: 109 West Gay Street
Coming: ??
What is it? Update: I got the scoop from the future owners. Here’s how they describe it, “La Tartine is a modern Mediterranean cafe that will be offering items such as crepes, smoothies, falafel, traditional sandwiches and much more!” Gluten free options will be available, for those of you off gluten. Exciting, I love me a good crepe!
Sedona Taphouse
Location: 44 West Gay Street
Coming: Fall 2020
What is it? 5,350-square-feet of proven food and beer fun. At 140 seats in the dining room plus 20 at the bar, this will have to be one of the Borough’s larger establishments. Sedona Taphouse is a franchise with about 15 locations across the eastern half of the United States. Expect hand cut steaks, seafood and 50 beers on tap. Scoop ‘N’ Smiles
Location: 6 East Gay Street
Coming: Late March
What is it? Dutch Farm ice cream and homemade water ice. Twenty flavors rotated daily. It will be taking the place of Coffee + Ice Cream bar, (ice cream) sandwiched between Side Bar and Lorenzos.
Stove & Tap
Location: 158 West Gay Street
Opening: Spring 2020
What is it? Expect a rustic-lodge vibe, an ever-changing menu and only the “freshest local ingredients” at yet another bar-restaurant getting ready to grace the downtown. This will be the third location for the popular Landsdale eatery the second opened in Malvern late last year. To give you an idea of what you can expect here is a sampling of menu items from their Malvern location: Smoked Chicken Pot Pies, Shrimp and Grits and of course, your All American burger. There is however, also a pretty decent choice of vegetarian options if your friends are going meatless this month.
Rolling Stars
Location: 706 E. Market Street
Coming: March 2020
What is it? A breakfast/brunch place featuring old-fashioned, kettle-boiled, New York style bagels baked daily on site – and a parking lot. Can’t underestimate the draw of easy parking.
So what do you think? Not a lot of diversity, but I can’t help be excited about all the new excuses we’ll have to head out.

Was wondering if the ice cream bar had closed or was just doing renovations. Any idea why it shutdown?
I don’t. They must have closed quietly over the winter. The spot is being taken over by Scoops N Smiles. They are just waiting on HARB to give them final approval on their sign and they said, they should be ready to open sometime next month.
West chester needs more retail shops…i.e boutiques, clothes. Art galleries, crafts..interesting stuff…not more bars
